Råängens Bread Festival is a bread market with a discussion stage that will be held for the first time on Saturday, October 17th from 11 am to 15 pm in the courtyard of Kapitelhuset, Lund. Free admission.
You will meet the bakeries Broder Jakobs, Leve, Patisseriet, Söderberg & Sara and Värpinge Gårdsbageri. They bring with them brand new breads and pastries that you won't find anywhere else. The breads and pastries are produced within Råängenbrödet , a collaboration between Lund Cathedral and five bakeries on cultural grains from local growers.
The festival highlights cultural grains, that is, grain varieties that were developed before the 1970s. They carry a story about our history and taste better than modern grains. During the festival, Love Coffee will provide the coffee and the courtyard will be filled with café tables. The festival is arranged by Lund Cathedral, which is developing Råängen. The cathedral's working group for Råängen is on site and will be happy to answer questions.
Conversation stage (limited number of places, no pre-booking):
What are cultivated grains and why should we use them when there are newer varieties? Based on the vital grains, in this lecture we take a holistic approach to sustainable agriculture, the food system, health and food security.
Råängen is a new district being developed by Lund Cathedral. The work began in 2012 and within a few years the first residential buildings will be ready for occupancy. What will those buildings look like? Will a district be different when a cathedral is building it? Why is food an important part of the work, and how did bakeries come into the picture? Architect David Sim talks to development manager Åsa Bjerndell and strategist Jens Almqvist, who leads the work with food and meals within Råängen.
Bread is good food. In this lecture you will get an introduction to baking with sourdough and cultured grains. You will learn how sourdough works, which flour to choose and how to make baking fit into everyday life.
